IT’S GRAZING SEASON!! Between gatherings and gifts, we often sabotage each other with delicious treats we later feel guilty about eating. Since quarantine has already thrown us off this year, let’s help each other get back on track!
Here’s an entire spooky spread that will keep ya on track while you (trick or) TREAT YO’ SELF!!
SPIDER BALLS
(20 minutes – 10 prep/10 set, 7-9 Ingredients)
Ingredients: 100g Oats, 50g Sesame Seeds, 50g Desiccated Coconut, 1 tbs Chia Seeds, 100g Dried Apricots (quartered), 200g Dried Mixed Fruit, 1 tbs Honey (optional), Pretzels for decorating!
Instructions:
1. Put ingredients into a food processor or blender in the order they are listed above (not the pretzels, those are just for decor), until everything is chopped and combined!
2. Put the mixture into a bowl, start rolling into walnut sized balls. It may help to get your hands damp in between!
3. Put the balls into an airtight container and place them in the fridge until ready to eat!
4. To decorate, break pretzels up to make little legs. You can also add white chocolate chips as eyes!
KG’s ADVICE: For me, this recipe was easiest in a food processor!
BURIED ALIVE YOGURT BARK
(10 minute prep- allow a few hours for set time, 5 ingredients)
Ingredients: 20 oz Yogurt, 1/4 cup Blueberries, 1 Kiwi, 1/2 Yellow Nectarine, 1 tbsp Coconut Oil (optional)
Instructions:
1. Line 8×8 pan with parchment or wax paper!
2. Combine yogurt and coconut oil in a bowl, mix it up! Then, pour into the pan.
3. Top with sliced kiwi, nectarine, blueberries, and Monster Googly Eyes (see recipe below or use candy eyeballs)!
4. Put in freezer until set.
5. Cut into pieces to serve!
MONSTER GOOGLY EYES
(10 minute prep- allow a few hours for set time, 7 ingredients)
Ingredients: 1 cup Powdered Sugar, 1 tsp Cornstarch, 1 tbsp Corn Syrup, 2 tsp Nondairy Milk, 1/4 tsp Almond *or* Vanilla Extract, Yellow and/or Green Food Coloring, Chocolate Chips (can use nondairy!)
Instructions:
1. Whisk together the powdered sugar and cornstarch.
2. Add in the remaining ingredients (except for the chocolate chips), a drop of food coloring of your choice, and mix until combined. (It should be a thick paste!)
3. Place into a piping bag and pipe dots onto a baking sheet lined with wax paper.
4. Top each with a chocolate chip!
5. Allow them to set on your counter, best if left out for at least 24 hours!
KG’s ADVICE: These were awesome in the yogurt bark, but would also be yummy on yogurt covered pretzels, or could be cute just set out in a bowl or around your spread!
KOOKY, SPOOKY FRUIT TRAY
(30ish minutes, 10-15 ingredients)
Ingredients: (amounts optional for how many you are making!) Red Apples, Green Apples, Oranges, Bananas, Grapes, Blackberries, Celery, Yogurt, Marshmallows, Yogurt Covered Raisins, Peanut Butter, Strawberry Jelly, Icing
Instructions:
1. Apple Monsters: Cut up all your apples, put your filling on both sides of the slices – I used peanut butter on some and strawberry jelly on the others! Then put your “teeth” inside – I used marshmallows, yogurt covered raisins, and sunflower seeds based on the look I was going for! Then add eyes using a tooth pick, marshmallows, and icing!
2. Banana Ghosts: I cut all the bananas in half, then some of them, I cut down the middle so that they’d lay flat! I used icing to draw their faces, but you could also use melted chocolate!
3. Grape Cyclops: Just added icing! Again, you could use melted chocolate!
4. “Pumpkin” Slices: I used an orange and celery, but you could also use clementines!
5. Spider Web Dip: For this, you can use any fruit dip you’d like! I used Greek vanilla yogurt and made the web with icing – again, feel free to use white chocolate! Topped with a blackberry spider – if you have a bigger bowl, you can put multiple on top! You could also add a small Pumpkin Fruit Bowl on the tray for the dip you provide!
KG’s ADVICE: This is a fun one you can do with or for the kiddos!
PUMPKIN VEGGIE TRAY
(5 minutes, 5 ingredients)
Ingredients: 2 lbs Baby Carrots, 1 Celery Stalk, Hummus, 1 Cucumber, 1 Mini Pepper of your choice!
KG’S ADVICE: I used a vintage serving platter for a spooky look and two tiny orange bowls for dip! This one is festive, cute, and you can alternate these veggies for what you like best – of course, fruit would also work for this!
