About 3-4 cups of fresh okra chopped
1 Med Yellow onion chopped
2-3 Medium fresh tomatoes
1/4 cup of bacon grease
1 to 2 tbsp of flour to coat okra & tomatoes
1-2 tsp sugar
Salt & Pepper to taste
In a large bowl, add okra, onion , salt and pepper. Add just enough flour to coat the vegetables. Heat bacon grease in iron pot or skillet. Heat till grease is hot add okra, fry slowly over low-med heat until okra is lightly browned and no longer slimy. This takes about 15-20 minutes. Stirring often. When okra reaches this stage add tomatoes and sugar. Continue stirring until tomatoes just begin to turn color. Do NOT add any liquid at any time. Reduce heat to low. Taste for salt and pepper. This should not be sweet. The sugar is simply to reduce the acidity of the tang in the tomatoes and help release their juices. If it is too tangy, add just another pinch of sugar. Stir. Turn off heat and cover. Let sit for 10 min before serving.
