4 tbsp of Butter
4 tbsp of AP flour
1 medium onion chopped.
2 cups of egg noodles (optional)
2 or 3 chicken breasts – cooked & chopped
About a cup of frozen peas and carrots
2 cups of mushrooms chopped
1-2 cups of chicken stock
1 cup of milk or heavy cream
Salt & Pepper to taste
In a pan, melt butter, add onions, and let cook for a couple of minutes and then add mushrooms, salt & pepper to taste. Continue to cook for 5 to 7 minutes on medium heat until tender. Once tender, add flour to pan and mix until the flour is absorbed. Add chicken stock to mixture and stir together until mixed. Bring to a slightly simmer and then add milk or cream and continue to stir until sauce thickens. Add frozen peas and carrots and let simmer for several minutes to cook veggies. Add salt & pepper to taste, if you need even more chicken flavor bouillon may be an option. After simmering for a few minutes, add the chopped chicken. Stir & serve!
