Meatloaf
1 lb hamburger meat
1 egg
½ cup chopped onion
½ cup chopped green pepper
¼ cup grated carrot (optional)
2 cloves of garlic chopped
2 tbsp ketchup
2 tbsp panko breadcrumbs
¼ tsp parley
¼ tsp paprika
1 tsp Italian seasoning
Pre-heat oven to 350. Combine & mix all ingredients in a big mixing bowl. To avoid meatloaf becoming too dense, try not to overmix. Form into a loaf, and transfer mixture to oven safe dish, place in oven uncovered for 40 minutes. After 40 minutes, remove meatloaf from oven – drain any excess liquid if necessary and cover in prepared glaze. Return glazed meatloaf to oven for an additional 20-25 minutes. Glaze will thicken as it cooks. Remove meatloaf from oven, let stand 10 minutes to cool & enjoy!
Meatloaf Glaze
1 tbsp brown sugar
¼ cup ketchup
1/4 tsp vinegar
¼ tsp tomato powder (optional)
¼ tsp garlic powder
¼ tsp onion powder
Dash of salt & pepper
Combine all ingredients in a mixing bowl and stir well. I like to put it in the refrigerator until it’s time to slather on meatloaf.
